Copperswife’s Apple Muffins (An Apple A Day Recipe)

If we don’t have coffeecake on Sunday morning, it’s a sure bet that we’ll be having muffins instead!!  Again, a yummy, easy breakfast for Sunday morning before worship that is made ahead on Saturday.  These are great and just seem to say, “Fall!”.  I do realize that I failed to post an apple recipe yesterday.  I’m so sorry, things are just busy here!  I’ll try to post two one other day this week to make up for it!


1 egg
1/2 cup milk
1/4 cup oil
1 cup grated, peeled apple (about 1 large apple)
1 1/2 cups flour
1/2 teaspoon cinnamon
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt

Heat oven to 400°.  Grease muffin tin (or line with paper muffin cups).  Beat egg.  Stir in milk, oil and apple.  Mix in remaining ingredients just until moistened. Batter will be lumpy.  Fill muffin cups 2/3 full.  Sprinkle with topping*.  Bake 20 – 25 minutes.  (Makes about 10 muffins)

Mix together 2/3 cup brown sugar and 1 teaspoon cinnamon and sprinkle over muffins before baking.
