I don’t live in the mountains. In fact, I’ve lived my entire life in a valley. As a child, I can remember my folks taking me on occasional trips to the mountains for a summer picnic or a winter romp in the snow. Going to the mountains, though, has always been a special treat.

The notation in my mom’s handwriting at the top of this recipe indicates that it is Copper’s favorite. A rich, creamy filling, on a graham cracker crust, layered with pineapple and bananas, covered with whipped cream, nuts and a cherry on top make this one of our all-time favorites. It’s especially good in the summer.

Dani came up with a wonderful version of Panini (a wonderful grilled sandwich). Of course, we do not have a Panini press, but that didn’t stop Danielle!
