I changed things up a bit on our menu this week.  We’ll have several rather hearty breakfasts early in the week, followed by lighter fare for  lunch.  Dinners will all be cooked in either the electric skillet, on the grill or in the roaster oven in the garage.  Wednesday’s dinner will be cooked on Dani’s new panini grill! Our bread will all be made in the bread machine.  Other than the time it takes for Dani’s herbed focaccia to bake for the panini, we won’t use the oven at all.

We’re having company for supper Sunday, but everything for Sunday, from breakfast through dinner, will be prepared Saturday except for the grilled pork.  My husband especially requested the BBQ pork tenderloin and it is his BBQ specialty!!  He’ll enjoy grilling that outside Sunday before dinner.

Our temperatures are to be in the mid to upper 90’s all week.  I will do my best to use the air conditioning as little as possible, and keeping the big oven off will be a huge help. I’m hoping on our upcoming shopping trip to work in more grilled meats to top salads for supper, or other light, cool, summer dinner fare.

As always, any dishes marked with an * will have their recipe posted later in the week, usually in the evening of the day it is prepared.  Also, the two recipes linked to Taste of Home are both tried and true family favorites in our home.

Dinner – Salisbury Steak, brown basmati rice, vegetables Normandy

Breakfast – Turkey bacon, eggs and toast
Lunch – Smoothies, Banana Nut Bread
Dinner – Grilled Chicken panini, green salad

Breakfast – Cold cereal
Lunch – Chef Dani’s Choice!
Dinner – Taco Pizza, green salad

Breakfast – Pancakes
Lunch – Corn dogs, applesauce
Dinner – Fried pork steak, chicken rice, zucchini

Breakfast – Oatmeal
Lunch – PBJ sandwiches, chips
Dinner – Freezer pizza

Breakfast – Chocolate Swirl Coffeecake
Lunch – Fellowship lunch at church, We’re taking baked chicken, fruit, *Melt-in-Your-Mouth Cookies
Dinner – *Copper’s Grilled Pork Tenderloin, tossed green salad, fruit, rolls & butter, Cookies and Cream Cake, Popsicles
