This week’s menu features a couple of Mexican dishes, as well as a couple of main dish salads (one for lunch, and one for dinner).   Monday’s dinner is a nice fix ahead, kid friendly meal since we’ll have the grandbabies for the evening.  Our corn is ready for harvest, so I’ve included corn on the cob for two meals as well (the rest will go into the freezer).

As always, any recipe marked with an * will have its recipe posted later in the week, usually late on the day that it is prepared.  Be sure to check out Menu Plan Monday to see all of this week’s great menus.

Breakfast – Dad’s Monday Mornin’ Waffles
Lunch – Taco Salad (with ground beef, cheese, beans, tomatoes, tortilla chips and salad greens)
Dinner – Stroganoff Meatballs

Breakfast – Bacon, eggs, Zucchini-Chocolate Muffins (from our freezer stash!)
Lunch – Bologna sandwiches, chips
Dinner – *Mexican Short Ribs (crock pot meal), corn on the cob, steamed broccoli

Breakfast – Cold cereal
Lunch – Bologna (or PBJ) Sandwiches, fruit
Dinner – Chicken Enchiladas (with green sauce), spanish rice, refried beans

Breakfast – Scottish Oats
Lunch – Left over enchiladas, salad
Dinner – Grilled Chicken Salads (with grilled chicken, feta cheese, sliced olives, grated zucchini, tomatoes and salad greens), Corn on the Cob

Breakfast – Pancakes
Lunch – Cheeseburger Soup, rolls & butter
Dinner – Spaghetti, Steamed Zucchini, Garlic bread

Breakfast – Cold cereal
Lunch – Left over Cheeseburger Soup
Dinner – Out on the way home from a birthday party

Breakfast – Chocolate Swirl Coffeecake
Lunch – Fellowship Lunch at Church (we’ll take two dozen baked chicken thighs, a crock pot of baked beans and several dozen chocolate chip cookies)
Dinner – Wild Dinner (left overs, popcorn, whatever)
