Late Summer Waldorf Salad

This is a fun, late summer take on the classic Waldorf Salad, substituting halved grapes for the raisins. The yogurt-based dressing gives it great flavor and a nice change from the norm. My kids and grandkids loved it!


5 Fuji or Gala (or similar) apples, diced (leave the peels on!)
5 stalks of celery, halved lengthwise and sliced
1 cup coarsely chopped pecans
3-4 cups red, seedless grapes (halved or whole depending on their size)
1 cup plain yogurt
pinch salt

Mix the apples, celery, pecans and grapes together in a large bowl.  In a small bowl or mixing cup, combine the yogurt and salt.  Sweeten to taste with honey.  Pour dressing* over salad and toss lightly to coat.  Chill before serving.

*For a different, yet equally yummy taste, use one 6 oz. container of fruit flavored yogurt as a dressing instead.  Strawberry or lemon would be great!
