Kathy’s Taco Soup

This was on our menu for Sunday lunch yesterday, but we had it for lunch today instead. Is it ever good!  This is a good, hearty, filling soup, and not at all too spicy. I love just filling the crockpot and letting it cook all day!  My blogging buddy, Kathy, graciously shared this recipe with us and then said to pass it along to you all, too.  Thanks, Kathy!


1 lb. ground beef, browned and drained
1 – 28 oz. can crushed tomatoes
1/2 cup water
1 – 15 oz. can corn, drained and rinsed
1 – 15oz. can black beans, undrained
1 – 15 oz. can kidney beans, undrained
1 package dry Hidden Valley Ranch dressing mix
2 Tablespoons – 4 Tablespoons taco seasoning mix
1 small onion, chopped

Combine all ingredients in slow cooker.  Cover and cook on low 4 – 6 hours.  Sprinkle with cheese and add a dollop of sour cream.
