Cowboy Casserole Recipe

We’ve been making this casserole for years. It’s a great one for the boys, but I think that has more to do with the name than anything else! It’s a snap to put together and re-heats well.  It’s a good one to make up early in the day and then put in the crockpot to cook on low all day.


2 strips bacon, cut into small pieces (*or 2 Tablespoons real bacon bits)
1 medium onion, chopped
1 lb. ground beef
2 cans pork & beans (small cans, 15-16 oz. size)
1/2 cup molasses
1/2 cup ketchup
1 Tablespoon worcestershire sauce
1 teaspoon salt
1/2 teaspoon dry mustard

Brown bacon and onion in skillet. Add ground beef and cook until meat is no longer pink. Add remaining ingredients.  Spoon into casserole dish. Bake uncovered at 375°for 30 minutes or until heated through and bubbly.

*If you use the real bacon bits, add them with the other ingredients after the ground beef and onion are cooked.

This recipe can be increased very successfully to feed a crowd. It can be cooked on low in a crock pot instead of using the oven.
