Oat Bran Muffins

These are a healthy, yummy all bran muffin. They are great for the freezer stash, too! (I’ll talk more about ideas for your freezer stash next week.) The recipe makes about a dozen muffins, but you can double it with no problem. Read to the end of the recipe for some good variations, too.


2 cups oat bran
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 egg whites, slightly beaten
1/4 cup honey or molasses (I always use molasses)
2 Tablespoons vegetable oil

Combine dry ingredients. Add egg whites, molasses, milk and oil. Mix just until moistened. Fill muffin cups. Bake at 425° for 15 – 17 minutes, or until golden brown. Makes about 1 dozen.

Variations: Add any ONE of the following:
1/4 cup raisins + 1/4 cup nuts
1/2 cup blueberries
1/2 cup mashed banana
1/2 cup finely chopped apple + 1 teaspoon cinnamon

  • Oh I have stayed silent for so long! I have read and read but now I just wanted to stop in and say hello! I have missed Dani when she has been away helping Lisa, I have worried about Will when he has not been feeling well, I have shown pictures to my 12 year old son of your eldest boy hosing down the compost to show him what it is *suppose* to look like, haha! And admired Corin’s precious babies along with praying for Copper when he was not feeling too well  himself. But most of all dear lady I so wish you were my neighbor! I am 38 and married for 13 years, this is my very first year home schooling, and my very first at many many things. Making home made bread, sewing ( or at least faithfully attempting to!) planting a bountiful garden to harvest this past Autumn, oh so many to list! But I have learned so many things from you, you have been the one I have turned to so many times to find certain scripture or recipes or how to do this or that. Thank you thank you from the bottom of my heart! I will keep your family in my prayers always…..
