Quick Chicken & Noodle Stew Recipe

I meant to take pictures and have all sorts of fun extras with this recipe.  Truth be told, I forgot (yes, yes I did) that I’d promised this recipe to you, so it was prepared last night without any sort of thought to posting.  You know what?  This recipe is, just as the title says, quick.  It’s also easy and yummy and you can make it all in the same pot you’ve cooked your chicken in.  It doubles and triples easily.  Enjoy.


1 1/2 cups cooked chicken, cut up
4 cups chicken broth
2/3 cup evaporated milk
1/2 cup chopped celery
1/2 cup chopped onion
1 – 4 oz. jar diced pimiento
1 teaspoon salt
1/2 teaspoon poultry seasoning
1/8 teaspoon black pepper
6 oz. dry noodles
2 Tablespoons flour
1/4 cup cold water

In a large pan, place cooked chicken, chicken broth and evaporated milk.  Bring to a boil and add celery, onion, pimiento, salt, poultry seasoning and pepper.  Return to a boil and slowly add the noodles.  Boil, uncovered, 10 – 15 minutes.  Combine flour and cold water, and pour into stew.  Stir continuously until thick & bubbly.

Serves 4.
