What’s Cookin’ In Copper’s Kitchen This Week

menu plan monday      Menu planning has been so helpful in my home.  It might not be beneficial to everyone, but it certainly has been for me.  Menu planning, week in and week out, allows me to see where we’ve fallen into some ruts.  It also helps me to plan what we eat for an entire day so that I’m sure we’re eating a balanced diet.  I can offer snacks to supplement areas that might be lacking otherwise.

     Menu planning allows me to make the most of my food buying dollar, too.  I’m able to watch for sales at the store, buy the best deals on meat, produce, etc., and then plan my menus around those specials and by otherwise well-stocked pantry.  Planning breakfast helps me keep costs down by limiting the amount of cold cereal (always a budget buster) we have each week.  This week, cold cereal is on the menu only once.

     As my menu planning has “matured” (oooo, I like that word), I’ve begun to work in some ways to build my freezer stash as I cook for my family during the week.  I’m able to use plenty of family favorites and yet I can still work in a new recipe or two each week for us to try.  Last week was a great trial run in this regard.  I plan to add to the freezer stash this week, a main dish to have available to share with another family, a few loaves of sandwich bread, two varieties of muffins. 

     I have some further goals for my menu planning, but I’m quite satisfied with the level we’re at now.  New for us this week is adding in one special dessert on Monday night, which is my husband’s first day off  each week (other than the Lord’s Day)  If you’d like some more menu planning inspriration, or a few new recipes to try,  be sure to visit this week’s Menu Plan Monday.

     New on our table this week will be Monday night’s French Dip sandwiches and Bananas Foster, and Wednesday evening’s Orange Glazed Meatballs.  The Orange Glazed Meatballs is a recipe I’m working up on my own, working from and updating an old, vintage recipe.  I’ve linked to recipes that are not my own, as well as to recipes in my archives.  Recipes marked with an “*”, there are three, will be shared here later in the week, probably late the day they are prepared.  Check back often if anything sounds good.  (By the way, I realized just now that I’d failed to share the Quick Chicken Noodle Stew last night, so scroll down for that recipe, too.)

WHAT’S COOKIN’ IN  COPPER’S KITCHEN THIS WEEK

MONDAY:
     Breakfast:  Waffles
     Lunch:  Black Bean Tostadas
     Dinner:  French Dip Sandwiches
     Special Dessert:  Bananas Foster

TUESDAY:
     Breakfast:  Maple Sausage patties, fried eggs, toast
     Lunch:  Double Decker Grilled Cheese Sandwiches, Sliced Peaches Almondine
     Dinner:  Baked Parmesan Chicken, Veggies Normandy with Cheese Sauce, Garlic Pasta Toss

WEDNESDAY:
     Breakfast:  Cereal
     Lunch:  Egg Salad  Sandwiches, chips
     Dinner:  Orange Glazed Meatballs*, Cheryl’s Chicken Rice, Green Salad

THURSDAY:
     Breakfast:  Old Fashioned Oats
     Lunch:  Left over meatballs & rice, baby carrots with ranch dip
     Dinner:  Spaghetti with Meat Sauce, Garlic Bread (using a baguette from my freezer stash), green salad

FRIDAY:
     Breakfast:  Pancakes
     Lunch:  Sliced Summer Sausage, Sliced Cheese, baby carrots, crackers
     Dinner:  Hamburger Patties in Mushroom Gravy, Fried Potatoes*, Green Salad

SATURDAY:
     Breakfast:  Scrambled Eggs, Raisin Bran Muffins (from the freezer stash)
     Lunch:  Chef Dani’s Choice
     Dinner:  German Pancake & homemade buttermilk syrup, fruit

SUNDAY:
     Breakfast:  Chocolate Swirl Coffee Cake (we missed making this last time it was on the menu)
     Lunch:  Fellowship lunch at church – We’ll take:  Teriyaki Chicken Wings*, Green Beans, Chocolate Cupcakes with Raspberry Buttercream Frosting
     Dinner:  Wild Dinner (My son William’s term for our Sunday evening fare – popcorn, left overs, cheese and crackers….every man for himself!)

  • Looks yummy.  I’m a bit behind on my menu for this week.  Still gotta come up with one more meal and then I’ve to decide what day to have what.
