What We’re Cooking This Week

     Monday evening we’ll be celebrating Corin’s recent birthday with a dinner here.  I asked her what she wanted for dinner and she said, “Surprise me.”.  I decided on a dish that I’ve not made for quite a few years, but that’s always a hit.  It was named by my daughters “MooBockOink” when they were younger.  I’ll share the recipe Tuesday.  Nothing else new on the menu this week.  I will share my fried potato recipe (a staple in my home growing up!)  Wednesday since I’ve had several requests. 

     Here’s what we’re cooking up this week:

MONDAY:
     Breakfast:  Copper’s fabulous waffles (where I get to lounge in bed while my husband cooks breakfast – bliss!)
     Lunch:  Nachos
     Dinner:  MooBockOink (recipe on Tuesday!), my own Chicken Rice Pilaf, Green Salad, Garlic Bread – Young Berry Pie (from last year’s berries!)

TUESDAY:
     Breakfast:  Big Breakfast Tuesday:  Bacon, Fried Eggs, Toast
     Lunch:  Tuna Salad Sandwiches, chips
     Dinner:  Chinese Burger Patties, Green Salad Oriental, Fruit

WEDNESDAY:
     Breakfast:  Cereal
     Lunch:  Tomato Soup, Lemon Crumb Muffins (current issue of Taste of Home magazine) 
     Dinner:  Meatloaf, My Dad’s Fried Potatoes Green Beans (all American dinner night!)

THURSDAY:
     Breakfast:  Old Fashioned Oatmeal
     Lunch:  Cheese, crackers and fruit
     Dinner:  Grilled chicken, Oven Fries, veggie

FRIDAY:
     Breakfast:  Pancakes
     Lunch:  In Town during the Mega-Shop
     Dinner:  I haven’t a clue….Dani will be gone, the boys and I will be doing the shopping…….my guess, we’ll pick up something at the store to bring home and cook, a deli pizza maybe.

SATURDAY:
     Breakfast:  Cereal (twice in one week! $$$$  Gotta knock that off!)
     Lunch:  Chef Dani’s Choice
     Dinner:  BBQ Chicken Pizza, green salad

SUNDAY:
     Breakfast:  Audrey’s Coffee Cake
     Lunch:  Fellowship Lunch at church.  We’ll take Ham-it-Up-Spaghetti, Green Salad, Snickerdoodles
     Dinner:  Wild Dinner – William’s term for our typical Sunday evening fare – popcorn, cereal, left over coffee cake, you name it!

PLANNED FREEZER COOKING: 
     Two Mediterranean Meat Pies (to bless others with – more on this later in the week)
     Sandwich Bread
     French Bread
     Lemon Crumb Muffins
