Menu for the Week

    

     One of the best parts about Menu Planning is when the unexpected happens. This past week, two of my planned meals weren’t used. One meal was missed when my son, Aaron, took us all out for dinner.heart  The second meal was missed on a day I knew I’d be in town. I’d planned, of course, to prepare the Quiche before heading to town so that the boys could just pop it in the oven for me later. Things didn’t quite go as planned (which is why I’ve learned to hold my plans loosely), and we had an inexpensive sub sandwich from the grocery store deli instead.

     All that to say, I have two meals already planned to plunk into the mix sometime in the near future!

     A busy week’s end has given me a bit of brain drag, but I was still able to cobble together what I hope will be a good plan for us this week. Tuesday we’re celebrating Copper’s Dad’s birthday with a simple meal and dessert. Thursday evening we’re hosting our Discipleship Group, after enjoying Corin and her children for the afternoon. That makes Thursday a great day to prepare the Aztec Quiche from last week in the morning, ready to pop into the oven an hour before we need to eat dinner. Dani will bake a big batch of her BIG chocolate chip cookies, which we’ll share with Corin’s kids and then our church group in the evening.

     The Mom Says “Yes” Snacks for this week are:

  • Yogurt
  • String Cheese
  • 2-3 Cuties (Mandarin Oranges)
  • Snack cup of raw almonds & raisins

     Here’s our menu!

SUNDAY:
   
Breakfast – Orange Coffee Cake 

     Lunch – Cold sandwiches & Chips after church,  William made “Monster Cookies” to share with others (Recipe from Will’s favorite cookbook!)
     Dinner – Wild Dinner! (Will’s term for on Sunday evening every-man-for-himself dinner)

MONDAY:
     Breakfast – Copper’s Monday Morning Waffles
     Lunch – Grilled Cheese on Sourdough, Spinach & Bacon Salad
     Dinner – Dani’s Chicken Fingers with Honey-Mustard Dipping Sauce, French Fries, Green Salad

TUESDAY:
     Breakfast – Cold Cereal
     Lunch – Anemic Spaghetti, Sliced Peaches
     Dinner – Paw-Paw’s Birthday Dinner: Stroganoff Meatballs over Noodles, Steamed Broccoli, Green Salad,  Angel Food Cake & Ice Cream

WEDNESDAY:
     Breakfast – French Toast
     Lunch – Turkey Sandwiches, Applesauce
     Dinner – Focaccia, Green Salad

THURSDAY:
     Breakfast – Old Fashioned Oatmeal
     Lunch – Panini-style Sandwiches (Ham, Cheese & Spinach on Sourdough, grilled in the Panini Press)
     Dinner – Aztec Quiche (a great make-ahead recipe from this cookbook.), Texas Cheese Toast
     THURSDAY GOODIE  – Dani’s BIG Chocolate Chip Cookies

FRIDAY:
     Breakfast – Pancakes
     Lunch – Left over Quiche OR PBJ Sandwiches, Baby Carrots
     Dinner – Lemon-Oregano Chicken, Couscous, Steamed Broccoli (Recipe from this cookbook.)

SATURDAY:
     Breakfast – Cold Cereal
     Lunch – Dani’s Choice
     Dinner – Nachos (Our Saturday Evening Tradition)
