Less than a week ago, our temperatures were in the mid – high 90’s and we were running the air conditioner. Today’s high is forecast to be about 70, and the first fall rains are on their way. Yay!
I’m still freshening things up in our weekly menus. It might sound crazy to say that almost every dinner we’ve had for the last two weeks and will have for the next two weeks are new recipes, but it’s been just what I needed. I love to cook, and it’s been great trying new recipes, using some fresh ingredients and enjoying new flavors and food combinations. All but a couple of the new recipes have come from back issues of Taste of Home magazine, but I know that they can be trusted for kitchen tested, good tasting, people pleasing recipes.
This week is a nice mix of new-to-us recipes from Taste of Home and some old family favorites. In honor of fall, we’ll enjoy broccoli three different ways (we love broccoli!), a homemade spiced applesauce, and a hearty vegetable beef soup. We’ll bid summer farewell with BBQ Chicken Pizza and a main dish Taco Salad for lunch. Casseroles are back on the table and my crockpot will move to the front of the appliance cabinet and stay there until spring. I’m hoping to perk up our breakfast and lunch menus in the weeks ahead, but for now I’m pleased with our updated dinner menus.
