Hello Summer – Menu Plan for the First Week of Summer

Summer will arrive this week. For some of you the summer weather has already begun. It was 105° at my house on Saturday! That’s just plain old hot! I’m looking forward to some great summer meals this week as we welcome the official start of summer.

Certain foods and flavors just seem to shout, “Summer!” to me. Lime, coconut, Indian spices, grilled meats and any dish with “kabob” in the title! Our menu this week has all of that, and more. I’m ready for summer this year, and I can’t wait to enjoy all sorts of summer delights as the season progresses. Hello summer!

Monday
Breakfast – Waffles
Lunch – Meat sandwiches, Chips
Dinner – Pork Kabobs with Onion Cakes and Peanut Sauce, Steamed Broccoli, Ambrosia Salad

Tuesday:
Breakfast – Cereal
Lunch – Homemade Tomato Soup (from Sue Gregg’s Soup & Muffin Cookbook) , Grilled Cheese Sandwiches
Dinner – Grilled Marinated Tri Tip, Fred’s Fried Puhtaytuz, Steamed Veggies  (I simply marinade my Tri Tip in Soy Vay Veri Veri Teriyaki Sauce all day and then grill it. Easy. Marvelous!)

 

Wednesday:
Breakfast – Breakfast Burritos (with ground sausage, eggs and cheese)
Lunch – Steak & Cheese Quesadillas (with the left overs from last night’s Tri Tip), Southwest Chopped Salad
Dinner –  Lime and Coconut Chicken, Cuban Black Beans, green salad

 

Thursday:
Breakfast – Hot Rolled Wheat Cereal
Lunch – Left over Tomato Soup, Crackers
Goodie (Corin and my grand babies will visit) – Dani’s Terrific Cinnamon Rolls (They’re awesome!!)
Dinner – Hot Dogs, Green Beans

 

Friday:
Breakfast – Pancakes
Lunch – Dani’s Choice
Dinner – Tandoori Chicken, Long Grain White Basmati Rice, Curried Carrots with Dill (the entire quick to prepare meal can be found in one of my favorite cookbooks,  which I reviewed here.)

 

Saturday:
Breakfast – Cereal
Lunch – PBJ Sandwiches
Dinner – Nachos and LOST (This has become a Saturday evening tradition as we enjoy watching this fun series once again, this time with the boys.)

 

Sunday:
Breakfast – Giant Muffins from the Costco Bakery (Sometime’s it’s okay to cheat and enjoy someone else’s baking!)
Lunch – Out After Church
Dinner – Wild Dinner (every one helps themselves to whatever sounds good!)
