Back In The Kitchen – Week’s Menu

I was able to start unpacking boxes and moving into my new kitchen Wednesday afternoon. By the end of the day Friday, everything was put away and I was feeling settled enough to make a new-to-me recipe, from scratch. What fun! I cannot tell you how wonderful it’s been to be able to be in there cooking and baking! Having everything in practical places, and having plenty of counter space to work, makes such a big difference. I can’t wait to share the kitchen with you later this week.

Things are still pretty crazy here. The kitchen might be organized and ready to go, but all of the adjoining areas that were included, one way or another, in the construction, are still being put back together, painted, and reorganized. The living room, dining area, parlor, entryway, back hall/pantry, and even the laundry room, are all in various stages of being redone. Whew! Copper has been working hard, and things are beginning to take shape.

I only have one new recipe on the menu this week. The Crispy Pan Fried Pork Chops with Three-Pepper Rub can be found in Cook’s Comfort Food Favorites 2013. I like the idea of adding the rub to the chops, and coating them in something other than bread crumbs, before frying. They sound delicious! I also love the way that their cookbooks give such thorough instructions, as well as give the “why” for the way they prepare foods. I enjoy learning new techniques and ways of doing things in the kitchen. Everything else  on the menu is a family favorite.

Monday – Bacon, Cheese & Avocado Burgers, Oven Fries, Green Salad

Tuesday – Crispy Pan Fried Pork Chops with Three-Pepper Rub, my chicken rice, steamed veggies

Wednesday -  Meatloaf, crash potatoes, green beans (We missed this meal last week, so I’m making it this week.)

Thursday – Burritos, southwest chopped salad

Friday – Tamara’s Focaccia, sliced peaches with cinnamon & nutmeg

Saturday – Nachos (a Saturday night tradition)

Sunday – Tomato Soup and Double Decker Grilled Cheese Sandwiches
